20 Minute Pasta | Creamy, Tomato Basil Pesto Pasta with spinach & shallots
This 20 minute pasta is creamy, flavorful & so easy to make. Would go perfectly with chicken or shrimp too! Easy recipe below :) Ingredients: • 1tbsp olive oil • 2tbsp garlic • 1 diced shallot • 4tbsp tomato basil pesto • 1/2 cup heavy cream • 1 cup of chopped spinach • 1 box of fusilli pasta • 1tbsp grated parmesan Recipe: • boil fusilli pasta al dente & reserve pasta water • bring skillet to med heat with olive oil • stir in garlic & shallots • turn down heat to low & add in tomato basil pesto • stir in cream, then pasta water (mix well) • as it simmers, add in spinach & pasta • top with grated parmesan
