After many bake-tests and experimentations, I finally found a sourdough pizza dough formula that I love! It boosts a very thin barely-there crust and a soft and fluffy cornicione. It takes 3 days to make (mostly just waiting for good things to come), but one bite you know it’s SO worth it! Unpopular opinion : Good pizza takes time! 👍👍  🅡🅔🅒🅘🅟🅔   550g 00 Flour *80g Levain (at peak) OR 1g instant yeast 375g Water 15g Salt 15g Olive Oil    @shebakesourdough

Die Menge reicht für ca. 6 Stück. 😀 Zutaten 🍆 1 Aubergine 6 getrocknete Tomaten 1 Mozzarella oder Büffelmozzarella Olivenöl Salz und Pfeffer nach Geschmack 1 Ei 5 EL Mehl 5 EL Paniermehl Zubereitung 🍆 1. Aubergine in ca 6 gleich dicke Scheiben schneiden. 2. Auf ein mit Backpapier belegtes Backblech legen und mit Olivenöl, Salz und Pfeffer marinieren. 3. Bei 220 Grad ca 20 Minuten im Ofen backen. 4. Mozzarella in Scheiben schneiden. 5. Aubergine mit Mozzarella und je 1 getrockneten Tomaten befüllen. 6. Anschließend in Mehl, verquirltem Ei und Paniermehl wenden. 7. In einer Pfanne auf mittlerer bis oberer Hitze von jeder Seite goldbraun in Olivenöl anbraten.

VEGAN CALAMARI
-2 eggplants • Peel them, then cut in slices and stance out the center with a lid. • -water • -2 Tbsp soy sauce or vegan fish sauce • -1 Tsp salt • -1 sheet Nori • -juice of 1 lemon • Cook the eggplants 5 minutes. • Drain it. • -1/2 cup (60g) flour • -salt and pepper to taste • -1/2 Tsp garlic powder • -3/4 cup (180ml) plant milk • Whisk. • Bread the eggplant with the batter and then breadcrumbs. • Fry in oil until crispy. • -
