Salmon & Avocado Breakfast Bowl Directions: Season 2 salmon fillets with salt & pepper. Cook in 1 tbsp olive oil for 4-5 min per side, then set aside. In the same skillet, add 1 tbsp olive oil and sauté 1 cup chopped broccoli and 1 cup sliced mushrooms with salt and pepper for 5-7 min. Remove from heat. Boil 2 eggs for 6-7 minutes for soft-boiled. Place in ice water, peel, and set aside. Divide veggies between two bowls, top with salmon, avocado, and a soft-boiled egg.
