Chilli oil scrambled eggs
I’m current going though a phase with these soft scrambled eggs combined with my homemade chilli oil (I’ve posted many recipes for chilli oils previously so please check them out). This pairing is elite and this is a PSA to all the baddies out there not currently cooking eggs in chilli oil - you should! For a perfect soft scramble, I liked to get my frying pan very hot and then add the eggs. As soon as the eggs are in I turn off the heat so the residual heat can do the cooking but also prevent
