15min · 3 servings Recipe: • -1 onion • -2 cloves garlic • -1 carrot • Sauté in oil for 3-4mins • -2 Tbsp tomato paste • -1 Tsp each cumin and paprika • -salt to taste • -optionally 1/2 Tsp chili powder • -1 can (220g) black beans • Stir fry 2-3mins. • Mash until it’s a chunky paste. • Sauce: • -3 Tbsp vegan yogurt • -3 Tsp vegan Mayo • -3 Tbsp chopped roasted peppers (I used jarred ones) • -1/2 lime, juiced • -1/2 Tsp chili powder • -salt to taste • Blend until smooth. • -3 small tortillas • Spread some bean filling and the sauce on one half of a tortilla. • Clap and fry each side until golden brown.

RECIPE (4 servings, 1h prep time): -a chunk of celeriac -2 carrots -1 onion -3 cloves of garlic Sauté in oil. -150g soy chunks -300ml water -2 Tbsp soy sauce -2 Tsp chicken spice Cook the soy chunks until all the water is gone. Then add to the veggies. -4 big Tbsp tomato paste -1 Tbsp flour Stir it in. -200ml red wine Deglaze the pan with it. -2 cups (500ml) water -salt and pepper to taste -2 bay leaves -1 Tsp dried thyme Let it simmer for at least 30mins but the longer the better.

20min · 4 servings - 2 tbsp olive oil - 4 cloves garlic - 1 cup (100 g) walnuts - 2 cups (400 g) cooked brown lentils - 1 can (400 ml) diced tomatoes - 1/2-1 chipotle pepper - 2 tsp chipotle sauce from the can of chipotle peppers - 2 tsp ground cumin - 1 tsp oregano - salt & pepper ⠀ Guacamole: - 2 ripe avocados - 1/2 red onion - a handful fresh cilantro (optional) - juice of 2 limes - salt & pepper ⠀ - cooked brown rice - pico de gallo - salad - or other fillings of choice ⠀ ❶ Roughly blend or finely chop walnuts. ❷ In a pan sauté the garlic until slightly golden for 30-60 seconds.
