a casserole dish with meat and cheese in it sitting on a table top

I do realize that a dish that needs an hour in the oven, might not, at first glance, seem to qualify for the epithet "quick", but I'm not trying to pull a fast one. All things are relative, and what makes this recipe feel so speedy is that there is no white sauce - with its roux and patient stirring - involved, the meat sauce takes around 5 minutes, and the lasagne sheets are used straight from the packet (no pre-boiling) and cook in the exaggeratedly liquid meat and tomato sauce. The recipe…

I feel as though I shouldn’t really have favourite recipes in this book as they are all very dear to me, but this lasagne holds a special place in my heart. Just don’t mention it in Italy, ok? A traditionally time-consuming, somewhat strenuous dish that leaves a mountain of washing-up, this version, though not traditional, fully replicates the flavours and feel of a layered lasagne in a simple, stress-free way. I hope you enjoy it as much as I do.

a casserole dish with meat and cheese

This is what I make for my children’s birthday celebrations, for farewell suppers to send them off before they go away, and for the dinners to welcome them back when they come home again. It’s our family take on a traditional lasagne, though I’m not sure Italians would exactly welcome my deviations from the classical recipe. For one thing, I don’t make my own lasagne sheets; while I have in the past, I now routinely use dried ones out of a packet and, what’s more, I don’t boil them first. In…

When I am feeling fragile and in need of cosiness and comfort, my favourite supper is a helping of minced meat with some grated cheese on top, eaten by greedy, grateful spoonful out of a cereal bowl. I have dispensed with much of usual, necessary chopping: I use cubes of pancetta and a little caramelized onion out of a jar. This is everything you could hope for, sweetly salving and as undemanding to make as it is rewarding to eat. If you can’t get hold of caramelized onions, there’s nothing…

a casserole dish with a spoon in it

Nigella Lawson's recipe for savory baked croissant pudding, which goes by the name of French lasagne in her house, uses up stale croissants by having the cook split and stuff them with ham and cheese, sprinkle more cheese over the top and douse them in eggs beaten with garlic-infused milk. Your croissants need not be stale to achieve wonderfully eggy, cheesy results, but if they are fresh, consider leaving them on the counter to dry out first, or even toasting them briefly in the oven.

two plates of pasta with mushrooms and parmesan cheese on the side, sitting on a wicker place mat

This is one of my proudest creations and, I suppose, a good example of a recipe that isn't originally from Italy, but sits uncontroversially in her culinary canon. I don't think it would be too presumptuous to name this linguine ai funghi crudi. It is about as speedy as you can imagine: you do no more to the mushrooms than slice them, steep them in oil, garlic, lemon and thyme and toss them into the hot cooked pasta. And please read the Additional Information section at the end of the recipe…

Nigella Lasagne Of Love

This Nigella Lasagne of Love recipe is made with onions, olive oil, milk, tomato puree, carrots, celery, garlic, pancetta, parsley, thyme, chilli flakes, minced beef, minced pork, red wine, beef stock, chopped tomatoes, sea salt flakes, bay leaves, milk, butter, flour, mozzarella, and Parmesan. It takes about 3 hours to prepare and serves 6 people.

a brown bowl filled with pasta and meatballs

The trick to these meatballs is to keep them small. Don’t actually use a teaspoon, but use about a teaspoon’s amount of mince to roll each ball. If there are children around, so much the better; they tend to like making these. But otherwise, they’re easy enough, and the slow repetitiveness of the action can be rather calming. To go with these divine meatballs, I like tagliatelle. De Cecco, Spinosi or Cipriani brands are all very good, but making fresh pasta is an experience worth trying. No…

a black plate topped with lasagna and veggies

Many of you might have noticed this recipe has had a name-change: somewhat lazily, and definitely erroneously, I’ve always called it “Mexican Lasagne”; I’m far happier with its new name, Tortilla Lasagne. Admittedly, there might well be those who take issue with the word “lasagne” here. Still, this is a lasagne-type pile-up and in place of pasta layers, there are soft tortillas and in between them a riotous assembly of tomato, red pepper, onion, chilli, corn and cheese. I advise you to put a…

a casserole dish with meat and cheese in it on a table next to plates

Lasagne is a labour of love. Whenever someone serves me one, I know that they've made a big effort. You have to make each component in large quantities and it can end up taking over your kitchen. But I promise that this lasagne is worth every minute of effort. It's not that much more time intensive than another but the key is in each component's flavour. We start with homemade spicy Italian sausage, fragrant with spices and fennel seeds and mix it with a thick, intense tomato base. This is…
