Honestly I think these are the best mashed potatoes I’ve ever had. They are a flavorful and lighter alternative to regular mashed potatoes and will go beautifully with roast turkey or beef. They also are loaded with much more nutritional goodness. All of the veggies lead to a side dish that is rich in Iron, Vitamin C, Vitamin A, Calcium and Potassium.
