Zutaten (für 3-4 Personen): 150g Glasnudeln 200g Tofu (ich habe fermentierten Tofu verwendet) 1/3 Salat (Eisberg- oder Kopfsalat) 1/2 Paprika 1 Karotte 1/2 Gurke 1 große Hand voll geschälte Erdnüsse 1/2 Bund Koriander (oder Petersilie / Minze) Dressing: 4 EL Sojasoße 3 EL Olivenöl 3 EL Apfelessig 1 TL geriebener Ingwer 2 EL Zitronensaft Zubereitung: Koche die Glasnudeln nach Packungsanweisung. Schäle die Karotte und schneide sie in feine Streifen. Schneide die Paprika in Streifen und die Gurke in Stücke. Hacke den Koriander fein. Breche die Erdnüsse durch, sodass du lauter Erdnusshälften hast. Gib alle Zutaten für das Dressing in eine kleine Schüssel und verrühre alles miteinander. Gib alle Zutaten in eine weitere Schüssel, gieße das Dressing darüber und vermenge alles miteinander.

Begin by melting dark chocolate in the microwave, heating it in 30-second intervals until it is completely melted. 2. In a blender, combine cooked rice, boiled water, and the melted dark chocolate. Blend until you achieve a smooth, velvety mousse like texture. 3. Pour the mixture into a bowl and refrigerate it for 2 hours until it sets. 4.
