Recipe:
• -300g green beans
• -100g bean sprouts
• Blanch for a couple of minutes.
• -1 cup (150g) peanuts
• -2/3 cup (80g) shredded coconut
• Roast until browned.
• -1 chili
• -2 lime leaves
• -2 shallots
• -3 cloves of garlic
• Blend with a splash of water.
• Fry the paste in 1 Tbsp oil.
• Add 1 Tbsp light soy sauce and sugar and the juice if 1 lime.
• Add the nuts back in and mix.
• Combine the veggies and the nut-spice mix and serve.
