Damian Chiliberti on Instagram: "Lobster Tail Linguine!! 🦞 Ingredients: * 2 x Lobster tail * 1 x Onion * 3 x Celery * 3 x Carrot * 1 tbsp Tomato paste * Splash of Brandy * Ice * Salt/ pepper * Butter * Garlic * Chilli * Chives * Lemon zest Method: * Remove meat from the tail. Vacuum seal Lobster meat with butter and sous vide 51C for 45 minutes. * Make bisque by searing vegetables. * add tomato paste, then add lobster tail shells. * Deglaze with Brandy, set alight. * Add ice, and cook at low temperatures. * Add 500mls water then simmer * After 45 minutes, blend it to puree and strain. Put back on heat and reduce. * When lobster tail is finished, open bag and add liquid to bisque. * Sear the tails for 2 minutes on a hot pan with olive oil garlic and chilli and set aside. * Cook p
